Hearty Kale Soup

greens_farmers_market_1.jpgOk, I probably have another kale soup recipe that's similar...but this one I invented myself...or maybe from memory!

Nonetheless, it's more of a method…as is most my cooking. Just know that it really is a mix and match, “put what you like in there” kind of method. I'm not precise about measurements, so get over it!

Hearty Kale Soup

one onion chopped

two cloves garlic chopped

one bunch kale cleaned and ribs cut out, torn into bite size pieces

one can white beans

one can diced tomato

savory tofu (from Trader Joe's-but use what you have) cut into cubes

veggie broth

oil for sauté

salt and pepper to taste

herbs that you like (I used thyme, you can use whatever you like)

Method:

Put oil in pan along with onions and garlic and sauté 5 minutes or so

Add in beans, tofu, diced tomatoes and kale

Add in enough broth to cover

Add the herbs you want to use

Let it simmer on the stove for whatever time it takes to heat through, maybe 10 minutes

Add salt and pepper to taste if you like and eat solo or along with a nice piece of hearty bread
